Ingredients: Chicken - 1 whole chicken (Cut off the head, chicken feet, tail, and excess fat at the bottom of the chicken to allow the beer can to fit securely.) Beer - 1 can (Pour ½ of the beer out of the can. You only need ½ a can of beer or replace with ½ a can of water or coca-cola or any pop soda of your choice in a pop can for non-alcohol. Optional to use cider as well. The purpose of the beer is for the beer aroma in the chicken and the beer can is for the chicken to cook evenly from the inside out.) Dry rub marinade ingredients: Pepper-salt seasoning - ½ tsp Sweet paprika - 1 tsp (non-spicy) Chilli powder - ½ tsp (spicy) Salt - to taste White pepper - to taste Herbs - optional Methods: 1. In a bowl, add in pepper-salt seasoning, sweet paprika, chilli powder, salt, white pepper, and mix well. This is the dry rub marinade. 2. Dry rub the entire chicken with the dry rub marinade. Start with the interior of the chicken and then the exterior of the chicken. Best to marinate at least 20 minutes. 3. Fold the chicken wings back and secure tightly. 4. Position the whole chicken over the beer can (containing ½ of the beer), and pull the bottom of the chicken until it covers the whole beer can and the whole chicken is able to sit securely. Make sure the top of the chicken is wide and hollow for better ventilation when baking. 5. Optional to spray a coat of oil on the entire chicken for crispy skin. 6. Place the chicken on top of a cooking tray lined with aluminium foil paper. 7. Bake at 180C (356F) for about 35 to 45 minutes depending on the size of your chicken or adjust accordingly to your oven temperature and time. For crispier chicken skin, bake for 30 minutes at 180C (356F) then increase temperature to 200C (392F) until cooked. 8. On a steam proof serving plate with tall edges, spread fensi evenly on the plate. 2. Place squid pieces on top the fensi with tentacles at the top of the plate, ring pieces of the bodies in the centre, and fins at the bottom to resemble the shape of the squids. 3. In a mixing bowl, add in minced ginger, minced garlic, and hot oil. Mix well. 4. Add in oyster sauce, sesame oil, light soya sauce, sugar, white pepper, fresh chilli, and mix well. This is the sauce. 5. Slowly spread sauce on top squid pieces. 6. Steam for 6 minutes. 7. After 6 minutes, sprinkle green onion pieces on top, pour hot cooking oil and drizzle with a bit of light soya sauce. Ingredients: Tapioca pearls - 2 tbsp (Put them in boiling water and continuously stir them to avoid sticking to the bottom of the pot. Let them boil for 5 minutes, turn off heat, cover the pot with a lid and let it sit and cook for further 15 minutes. This will give you about 20g of cooked tapioca.) Gelatin powder - 20g (Dissolve in cold water.) (Gelatin powder is from an animal source. For vegetarian, you can use about 2 - 3 tbsp of cornflour and dissolve in about 3 tbsp of cold water or use the Japanese Kanten powder, which is from a seaweed plant source. Not advisable to use agar-agar powder because the texture will be different.) Coconut milk - 200g Milk - 100g Sugar - 60g Mango cubes - optional Garnish topping ingredient: Osmanthus jam Methods: 1. In a cooking pot, add in coconut milk, milk, sugar, and cook until the sugar has melted. 2. Add in dissolved gelatin powder and mix well. This is the coconut milk mixture. 3. To assemble, add about 1 tbsp of cooked tapioca into a tart mould then pour in coconut milk mixture and mix well. Continue with the rest of the moulds. 4. Put in the refrigerator for 2 hours to set.

雖然明白想加強視覺效果,但啲鏡頭好飄,又矇和郁得太犀利,又唔知點解有雜音察察聲,我覺得只KEEP之前的前鏡頭,做LIVE定定地仲好過,如想繼續改善,先處理咗啲雜音先,睇到後段唔想再睇下去,謝謝(我相信肥媽是聽意見的人,如有冒犯,請見諒,因我太想繼續睇肥媽了)
